So you're going to be a summer associate. maybe it's your first big job, making the big bucks, working for the big city law firm. sure, you've studied long and hard for two years and you think you can impress the partners with your knowledge of the law. you can explain the difference between a partial verdict and a perverse verdict, or even substantial evidence versus substantive evidence. i bet all your fellow summer associates can as well. but do you know the difference between pinot grigio and pinot noir? how about a pouilly-fum versus a pouilly-fuiss? rah, d ; explosion of wine consumption in this country. restaurant wine lists are filled with a panoply of bottlings from all over the world. and believe me, biglaw executives with their expense accounts love to order that big bottle of cult california cabernet. so this column is devoted to you, the budding lawyer and future oenophile. a brief study of wine may be even more useful in your professional career than a year of legal research and writing and certainly more enjoyable ; . that's where the monthly wino comes in. every month i'll try to impart a little wine knowledge and hopefully you'll make a jeffersonian effort to drink a bottle or two until we see each other again. and so this brings us back to this month's subject, pouilly-fum pronounced poo-yee foo-may ; . pouilly-fum is a french wine which comes from an area of the eastern loire valley in france near the town of pouillysur-loire. many different winemakers make a pouilly-fum, and in france wines are generally named after the area they come from as opposed to the grapes from which they are actually made which is how most of the rest of the wine-growing world, including america, labels its bottles ; . pouilly-fum is made from the sauvignon blanc grape. the wine is very similar to another wellknown loire valley wine called sancerre from the area surrounding the town of--surprise-- sancerre ; which is also made from sauvignon blanc. so really, this week's subject is not just pouillyfum, but sauvignon blanc, a grape which is actually grown all over the world. sauvignon blanc is a great warm weather wine. it should have a nice core of fruit and acidity which makes it slightly lighter-bodied and more refreshing than a buttery, oaky chardonnay. it's one of my favorite white wines to pair with seafood, and it also goes well with many vegetables, especially that notoriously difficult-to-match asparagus. and one of the great things about sauvignon blanc is that it's grown in many different regions around the world. some of my favorites sauvingon blancs are from new zealand, south africa, and the aforementioned sancerre and pouilly-fum. and to top it all off, you can find many of these sauvignon blancs for around in your lophoto by tanya wang cal wine shop. so your assignment for next week is to buy or order in a restaurant ; and drink a bottle of pouilly-fum or other sauvignon blanc. and try it with shellfish, vegetables, or a white fish like halibut or snapper. resist the temptation to fall back on that california chardonnay you know so well. you're sure to impress your summer boss, who probably has five cases of over-oaked chardonnay in his "wine cellar" in the closet of his central park west penthouse. and maybe you'll just sew up that post-graduate job in the process. geordie zug, before embarking on the study of the law, spent three years as a captain in one of new york city's top restaurants. questions? e-mail him at cgz8a virginia.
